Chickpea Tofu is more commonly known as Burmese Tofu or Shan Tofu and is the most popular type of tofu enjoyed across Myanmar (Burma). Ingredients

  • Preparation

    1. Mix 150 g of flour mix into 200 ml of room temperature water and stir until well dissolved.

    2. Bring 500 ml of water to boil and then add the batter made in Step 1.

    3. Continuously stir the batter in one direction for about 5 minutes over medium heat until the mixture becomes thick.

    4. Pour the batter mixture into a container and level the surface.

    5. Cool the mixture at room temperature for at least 1 hour.

    6. Cut tofu into pieces. Ready to serve.

    Cooking Instructions

    1. Tofu Kyaw (တို့ဟူးကြော်)

      Burmese Tofu cut into rectangular shapes and deep fried into tofu fritters. They may be eaten with a spicy sour dip, or cut and made into a salad. They are crispy outside and soft inside are similar to the Sicilian snack panelle.

    2. HnaPyan Kyaw (နှစ်ပြန်ကြော်)

      The tofu fritters are "twice fried" after the tofu is cut into triangular shapes. It is the traditional form in the Shan State.

    3. Tofu Gyauk Kyaw (တို့ဟူးခြောက်ကြော်)

      Deep-fried tofu fritters, like HnaPyan Kyaw, are usually served with Htamin Chin ( 'sour rice') balls kneaded together with tomato and fish or potato, another popular Shan dish.

    4. Tofu Thote (Tofu Salad - တို့ဟူးသုပ်)

      Fresh Chickpea Tofu, cut into small rectangular slices, constitutes the main ingredient of the salad, dressed and garnished with peanut oil, dark soy sauce, rice vinegar, toasted crushed dried chilli, crushed garlic, crushed roasted peanuts, crisp-fried onions, and coriander.

      Tofu salad is very popular as a snack or a meal in itself.

    5. Tofu Nway (တိုဖူးနွေး)

      Tofu Nway (translated into “warm tofu”) is the soft creamy yellow chickpea tofu served hot before it sets, usually as a salad, dressed and garnished the same way as Tofu Thote (Tofu Salad). It may be combined in the same dish with tofu fritters or rice noodles.

    6. Tofu Chet (Curried Tofu - တိုဟူးချက်)

      Sliced yellow chickpea tofu may also be curried with fresh tomatoes, onions and garlic, cooked in peanut oil and fish sauce, and garnished with coriander and green chilli.

      It makes a good pescatarian dish to go with rice, but also popular protein-rich meat replacement dish.
